Turkey Panini

Here’s a great recipe for leftover turkey. My whole family looks forward to these …………..
Turkey Panini

You’ll need:
cooked turkey
crusty bread like foccacia or ciabatta
olive oil and butter
swiss cheese
cranberry relish, not the jello salad kind
arugula or baby spinach
brown or dijon mustard

For each sandwich spread one slice of bread with mustard. Add a slice of swiss cheese and spread cranberry relish over it. Top with a layer of cooked turkey and a layer of arugula or spinach, finish off with the final slice of bread.

Paint the bread with a mixture of melted butter and olive oil. Grill in a hot skillet or electric grill until golden brown and toasty. Serve hot.

    Sounds good! We have one meal of hot turkey sandwiches and mashed potatoes topped with gravy, followed by turkey tetrazzini the next day.
