Chicken and Dumplings ~ Texas Style
My apologies to all the Texas ladies out there who may take exception to this recipe being “Texas Style”. Its not really, but at the time it sounded good.
Being from the South US and the country side of the South, I make a regular chicken and dumplings that is so good, frankly, it will butter your biscuit.
This recipe, though it is unusual, is very delicious and since it is so fast to make, its a good one to have one hand when you are busy.
Texas Style Chicken And Dumplings
Ingredients:
1 whole chicken
6 cups chicken broth
2 small carrots, grated
1 small onion, grated
4 black peppercorns
salt to taste
5-8 whole wheat (or regular) tortillas, sliced into 1/2″ slices and then cut into 2 inch pieces. The number of tortillas depends on how many servings you want. I use about 1 tortilla per person.
If you are GI, use what ever kind of homemade tortillas you like.

Place the chicken, vegetables and peppercorns in a large crockpot and cook on HIGH until the chicken is tender and falling off the bone.
Remove the meat from the bones, return the meat to the crockpot. Turn on HIGH.
Bring the chicken broth to a boil on the stove, then add it to the crock pot and chicken meat.
Cook for another 20-30 minutes on high.
Turn off heat in crockpot.
Add the cut up tortillas to the chicken and broth.
Taste and add salt.
That’s it. The tortillas will get soft almost immediately. Even leftovers are good.
