Easter Menus?

I usually prepare a special menu for my family on Easter Sunday. I thought I’d share what I am planning and ask if you are planning anything special.

Here’s what I think we might have …

An herb baked ham. I make a paste of fresh green herbs and rub it onto the ham before baking, along with salt, pepper and olive oil.

Mashed potatoes. What family dinner would be complete without the obligatory mashed potatoes??

Roasted asparagus. Just toss with olive oil and coarse salt and roast in a 450* oven til crisp tender.

Yeast rolls. Ditto what I said about the potatoes.

Green peas and little onions.

Fresh green salad and a creamy Caesar dressing, homemade croutons

Lemon Chiffon cake with lemon icing.

    I typed up a comment and poof! it’s gone! Hopefully it doesn’t appear twice.

    Usually we have Easter dinner at my parents house, but this year it will be here. Each year I am taking over cooking for more Holidays and we’re adding a few more people. I love it! My daughters new husband will be joining us for Easter!

    Our Menu:
    Baked ham (I glaze it with pineapple juice, brown sugar and mustard)
    Red potato salad
    Macaroni salad
    Corn (cooked with butter and cream)
    Vegetable casserole
    Green Beans
    Deviled eggs
    Homemade yeast rolls
    Coconut cake
    Orange pound cake
