Chocolate Banana Muffins

These are really easy and very tasty!

Chocolate Banana Muffins

3 very ripe (even over-ripe) bananas
1/2 cup vegetable oil
2 eggs
1/2 cup packed brown sugar ( or use rapidura)
1 1/2 cups all-purpose flour (or use light whole wheat)
3 tablespoons cocoa powder (the better your cocoa powder, the better the muffin)
1 teaspoon baking soda
12 cup muffin tin, lined with paper liners

Preheat oven to 400*F

Mash the bananas. I used a stand mixer.
Add oil, eggs and sugar. Keep mixing.
Add flour, cocoa powder and soda, mix gently.
Spoon batter into prepared paper liners.

Bake 15-20 minutes or until done.

    Hmmm, I don’t usually add chocolate to our muffins, but there are many ripe bananas on the counter waiting for something… maybe something new and different? :)

  3. Oh my! These sound wonderful…sounds a wee bit like a cupcake…but I’ll still call it a muffin and have it for breakfast! ;)

    I just made a batch of these, they are delicious. I added chopped walnuts to mine and also did half whole grain flour. So good.
