Menu Plan Day

Time to make menus for the week. Yay.
Its February and I can’t get too excited about cooking right now. Meals in the winter are usually heavier and more hearty than spring and summer meals. I’m tired of heavy foods so I’ve tried to include a few fresher, lighter meals. Plus, I am trying to get lighter on the carbs for myself so this week will be mostly low carb for me with carbs thrown in for the rest of the family.

Breakfasts ~
scrambled eggs with asparagus
whole grain toast and fried eggs, bacon
homemade yogurt with granola….I will be making some easy stove top granola later this week, so stop by to see it.
cheese toast and hot tea

Lunches ~
fruit salad
boiled eggs, crackers, sliced apples
tuna with evoo and lemon pepper, fresh lettuce, whole wheat crackers, apples
Japanese noodles with fresh mushrooms, baby spinach and some tamari
salted salmon, rice, frozen peaches

Suppers ~
baked salmon in cream and herb sauce
pork and apple stew, salad, cornbread
shrimp bisque, yeast rolls, green salad, Italian pot roast with tiny veggies
beef skillet with coconut milk, broccoli and tomatoes

Desserts:
marmalade cake for Valentine’s Day
Chocolate cake with ganache
white chocolate chip cookies.

As always, I will strive to get recipes and pictures up as the week goes on!

    I love to read menus to get ideas. I am so terrible about making a menu for the week. I always have good intentions. I have lots of cookbooks, recipes that friends have given me, recipes from the newspaper.. and of course there is always the internet from various websites as well as allrecipes.com… I really love to go to http://www.allrecipes.com because I may have some leftover pinto beans, and I want a recipe quick that I can use up whatever leftovers I have.
