The past year or so, we’ve had Thanksgiving here at home. Here are a few of our recipes we enjoy!!

    Aunt Kathy’s Potato Casserole
6 lg. potatoes 1 sm. carton sour cream 1 can cream of chicken soup 1/2 c. diced onions 1/2 stick butter 1 c. grated cheddar cheese Salt and pepper to taste
Boil potatoes and drain. Slightly brown onion in butter. Mix drained potatoes with onion in butter and the rest of the ingredients. Bake 30 minutes on 350 degrees.

    Aunt Kathy’s Corn Casserole
1 can regular corn 1 can cream corn
    2 TBS flour onion
    ½ stick butter 1 egg
¼ cup sugar salt to taste
    Pepper to taste
Mix both cans of corn in casserole dish (juice & all). Add flour. Saute diced onion (as much as you want) in butter; then put in corn. Mix egg & put into corn. Put sugar, pepper and dash of salt into corn. Bake at 350*F till crusty around the edges about 1 ¼ – 1 ½ hours. If you double this recipe use 3 eggs instead of 2.

    Pumpkin Pie
    ¾ cup granulated sugar
    1 teaspoon ground cinnamon
    ½ teaspoon of salt
    ½ teaspoon ground ginger
    ¼ teaspoon ground cloves
    2 large eggs
    1 can (15 oz) Libby’s 100% Pure Pumpkin
1 can (12 oz) evaporated milk
    1 unbaked 9 inch deep-dish pie shell
    Cool Whip
Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
    Pour into the pie shell.
Bake in preheated 435*F oven for 15 minutes. Then, reduce the temperature to 350*F and bake for 40 – 50 minutes. When you serve your pie, be sure and top it with some Cool Whip.

We also watch “Macy’s Thanksgiving Day Parade” and after our feast, we look for Christmas movies. Then, we pour over the Black Friday Sales Ads!! hahaha

I can’t hardly wait until Thanksgiving Day 2009!!!!!!!!!!!!!!!!!

Well, this year we had Thanksgiving early on my mom’s side (Sunday) because my aunt and uncle will be going to visit their daughter and her family in Florida. On Thanksgiving day, we will eat our noon meal at my FIL’s house and also have Christmas for the extended family. At supper, we might go to my MIL’s in-laws. I have to ask hubby if this is what he wants to do! I usually don’t have to cook that much for these get-togethers, maybe a side dish. Sunday, I brought cherry dessert, cucumbers and onions in a creamy dressing, and broccoli-rice casserole. On Thanksgiving, I have to bring some type of green salad. Any ideas, anyone?

I really miss Thanksgiving when I was younger. We all got together at my dad’s parents and totally FEASTED!! We would even watch the Macy’s Parade before we left for Grandma and Grandpa’s! I don’t get to watch it much anymore. Now, I just feel like I run from one place to another. Guess that is what happens when you grow up! :-)

    CHERRY DESSERT

    1 can cherry pie filling
1 can Eagle Brand condensed milk
1 cup pineapple tidbits, well drained
1 cup fruit cocktail, well drained
    1 cup miniature marshmalllows
    8 oz. container Cool Whip
    1 cup chopped nuts, optional

–Mix all together and refrigerate. This keeps well and freezes well.

    CREAMY CUCUMBER SALAD WITH DILL

1 cup mayonnaise, or salad dressing (Miracle Whip)
    1/4 cup sugar
    1/4 teaspoon 5% white vinegar
    1/2 teaspoon dill weed
    1/2 teaspoon salt
4 medium cucumbers, peeled and thinly sliced
    1 Tablespoon finely chopped onion

–In a large bowl, mix together the first five ingredients. Add the cucumbers and onion and stir to coat. Cover and chill for 2 hours.

    BROCCOLI-RICE DISH

1 can cream of mushroom soup
    1/2 stick of margarine
1 small onion, chopped and sauteed in margarine
1 (8 oz.) jar Cheez Whiz
1 pkg. frozen chopped broccoli (not cooked first)
1 1/2 to 2 cups Minute rice, prepared (don’t substitute)

–Combine all ingredients in a greased casserole dish and bake at 350 degrees for 30 minutes.

Enjoy and have a wonderful Thanksgiving!!

We either have some of my husband’s family over for dinner, or my side will gather at my sister’s house for dinner. Our dinners are pretty traditional–turkey, stuffing, potatoes and gravy, cranberry sauce (jellied, thank you!) and pumpkin pie. While my gang loves the Campbell’s green bean casserole, my sister fixes kernel corn.

When I was a kid, Thanksgiving was the only time of year my mom made Waldorf salad and the sweet potatoes with the marshmallows. Neither of us has continued this. Nice to tie those to a family time tho. :)

We’re not sports fanatics at all, so we usually get the card games going; a good chance to laugh, visit, and while away the hours. Like Linda, we also scan the Black Friday ads and head out in several groups for an hour or two in the morning, tho it’s a newer tradition.

We usually gather here at my house for Thanksgiving. Things have changed recently. My mom works at Walmart and they are now open on Thanksgiving day and my brother is a Respiratory Therapist, so he usually works holidays. He is especially busy with all the H1N1 sickness.

So…. we will gather here in the evening. We do a traditional dinner with turkey, stuffing, mashed potatoes, sweet potato casserole, green bean bundles, sauteed broccoli, corn, and homemade yeast rolls. I usually go all out on dessert so I can send dessert home with my parents as well as my brother. I will have Italian cream cake, pumpkin pie, maybe a chocolate pie, and I’ll fix something sugar free for my mom who is diabetic.

While I’m cooking we channel surf between the Macy’s Thanksgiving Day Parade and whatever football might be on.

Every year, since I was 18, I have always made the apple pies for Thanksgiving. Even if I made all the main courses for many people, I still made the pies from scratch. My entire family requested my apple pies. DH always says how much he loves my apple pie. My mom and brother bragged about my apple pies to everybody. So naturally, I took great pride in my pies. A few years ago, I saw this recipe on the Martha Stewart Show and it sounded delicious. I loved the interesting crust on top. It was pie crust cut into little scalloped circles that overlapped one another. And even though it was a little different from my usual recipe, I knew it had to be a winner. So for a change a pace, I changed my recipe and tried this new one.

The recipe had the typical ingredients along with more lemon juice than I ever saw in an apple pie, along with lemon zest. I just thought those would enhance the apple flavor. It sure did!!!! My mom took one bite and asked me, “What did you put in this? Did you put in rosewater?” Rosewater??? After serving everybody, I finally took a bite. Yes, it did taste just like….roses!!! No apple taste at all! I know apples are related to roses. But I never had a pie that tasted like roses. And it wasn’t very good. In fact it was awful. Everybody was being polite, eating the pie. When I fianlly announced that it was awful and I wasn’t going to eat anymore, everybody got a look of relief on their faces and asked for more pumpkin pie…..and more coffee. :-)

Thanksgiving is a very special time for me. It is the only holiday that “commercialization” has not squeezed the stuffing out of! Literally! I have a very small family so has not been hard for all of us to get together. We usually go to my sister-in-law’s house in Norman, OK but this year we are opting to stay home and spend the holiday with my side of the family. It is going to be an extra special day because Thanksgiving Day is also my parent’s 45th wedding anniversary. My parents were married in a very small, private ceremony in the home of their pastor. Afterward, they drove 30 miles to Blackwell, OK to have cherry pie at their favorite little diner. So this year we will be adding cherry pie to the Thanksgiving menu.

    Cherry Pie

Pie dough for double crust pie (2 rounds)
4 c. fresh sour cherries (pitted) or 2 cans tart cherries (not cherry pie filling)
2 2/3 tbsp. quick cooking tapioca
    1 1/3 c. sugar
    2 drops almond flavoring
    2 Tbls butter

    Preheat oven to 450 degrees.
    Line pie pan with crust.
Drain cherries. Mix with tapioca, sugar and almond flavoring.

Let fruit mixture stand 15 minutes. Pour fruit into pie shell and dot with 2 tablespoons butter. Cover with well-pricked top crust or lattice. Cover edges of crust with a pie shield or foil to prevent over browning. Bake about 40 minutes or longer until golden brown.

My family tradition for Thanksgiving has changed but what we used to do was either my daughters’ aunt and two cousins came to MA or we went to NY and shared Thanksgiving. When we had Thanksgiving at our house my daughters’ grandmother would come down from NH. I would cook up a storm and watch The Macy’s Thanksgiving Day Parade. After dinner the kids would do the cleaning. Then the fun began.. Two years ago there was a Cool Whip fight in my house followed by hours or Guitar Hero and putting up our CHRISTmas decorations.
This year is different. We are in a new home and in a new family. We will be celebrating Thanksgiving this coming Sunday as my father will be here for a visit. This year I will not be the head cook :-( or in charge of the menu. But I did win out with the Green Bean Cassarole (one of my father’s favorite dishes). I guess it is not a dish that is liked here…

Unfortunately I have no recipes to share due to the upheaval I went through but now is the time to make new ones and get new traditions and for that I am thankful.
