Beet Greens, Beans and Bacon

Who would have ever thought you could make something so delicious as this from the green parts of a beet?

I threw this together in less than 10 minutes. The family loves it and its very healthy. Try it!

You will need:

  1. a bunch of beet greens, no certain amount
  2. bacon, enough to serve your family
  3. cooked white beans
  4. thyme and rosemary or herbs to your own taste
  5. dried tomatoes
  6. salt and pepper to taste

Chop the bacon into bite-sized pieces and fry it in a heavy skillet until done. Add the tomatoes, beet greens, beans and seasonings, cook til the greens are wilted. Season with salt and pepper to taste.

That’s it! Now how easy was that? And Deeee-licious, too.

  1. I really, really love greens!! We always ate beet greens growing up…with just some butter and vinegar and salt…yum, I am craving now!!

      Jen,
      Mark doesn’t care for them either, so I don’t make a ton of them, but I add them to dishes where he won’t be eating a lot of them like the bacon and bean dish. Sometimes I just make enough for me! :D
