Ground Beef and Black Bean Skillet Dish
In a large skillet, brown 2 # ground beef and one chopped onion, drain. Return to heat.
Add 1 (14 oz) can low fat coconut milk
2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons chopped fresh parsley
(If desired you may add 1 (15 oz) can chopped tomatoes and the correct the seasonings.
Simmer for about 10 minutes.
Serve over cooked brown rice
