This is an easy, very delicious recipe that’s almost Colcannon…. that homey dish of Ireland that contains cabbage and potatoes. We like it very much and its extremely easy to prepare which makes it a good dish for summer time; you don’t have to have the stove on for very long! 
The dish contains slices cabbage, diced potatoes and sausage. You can substitute bacon for the sausage. You could even substitute ground beef or turkey for the sausage for a completely different but equally good dish!
Amounts of each ingredients is up to you, just make enough for seconds!
Ingredients:
Smoked sausage or bacon cut into dice or in the case of the sausage, pulled into bite sized pieces, browned in a skillet.
Potatoes, peeled and cut into bite sized pieces.
Onion, also diced
After the sausage is browned, add the potatoes and cook til they are done. You may need to add some oil if your sausage isn’t very greasy so the potatoes won’t stick. After the potatoes are done, add the shredded cabbage. Stir everything well, season with salt and black pepper. Cover the skillet and allow the dish to cook til the cabbage is done, stirring periodically.
When done, serve it up hot. Its good with homemade bread or cornbread and sliced tomatoes!

This looks so yummy! I cook a meal for my brother and myself sometimes that’s easy, but probably full of fat lol. I just take a chicken breast and chop it up. Cut up a few potatoes. Salt and pepper them. And fry them up together. (I start the chicken a little earlier since it takes longer).

Ohhhh … colcannon! It really is delicious. Actually, it’s one of those dishes that women the world over have invented – what’s to hand or needs using up and doesn’t cost much. Colcannon is lovely with grilled or roasted meats, and is perfect “comfort’ food, too.

This kind of dish is right up my alley! Thanks for the idea–we had it the other night with some onions, Kale from the garden, and some leftover pork loin roast. We will definitely have it again!
